Growing up, fruit pizza was one of my go-to desserts to make in the summertime! I'd always make it for our family to enjoy during weekends at our cottage. Now, I've created my own mini version for you to make and share with your friends and family!

Step 1: In a mixing bowl, cream together the butter and granulated sugar until it's light and fluffy. Mix in the egg and vanilla extract to combine.

Step 2: Stir the all purpose flour, baking soda, and salt into the wet ingredients until just combined.

Step 3: Scoop 3 tablespoons of dough, roll it into a nice ball, and place it onto a parchment-lined cookie sheet for each sugar cookie. Bake at 350°F until the edges start to tan.

Step 4: Make the frosting by mixing the softened cream cheese, butter, powdered sugar, and vanilla extract together until smooth.

I don't recommend prepping the cookies too far in advance because they can get soggy, but you could make each component ahead of time and assemble the cookies right before serving.

I like to use sliced strawberries, raspberries, blueberries, kiwi, grapes, and mandarin oranges. But you can try any combination of fruit that you like or is in season!

Can I make it into one big fruit pizza?

Absolutely! This is a great way to serve the fruit pizza as one large dessert, and you can have fun arranging the fruit in different patterns.

Ingredients

Sugar Cookies

  • ½ cup (113.5 g) unsalted butter room temperature
  • cup (133.33 g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cups (187.5 g) all-purpose flour weighed in grams or spooned and leved
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Cream Cheese Frosting

  • 3 ounces (85.05 g) cream cheese room temperature
  • 1 tablespoon (14 g) unsalted butter room temperature
  • ¼ teaspoon vanilla extract
  • 1 cup (120 g) powdered sugar

Fruit Topping

  • variety of washed and dried fresh fruit (strawberries, raspberries, blueberries, grapes, kiwi, oranges, etc.) chopped or sliced

Instructions

  • Preheat oven to 350°F.

  • In a large bowl, cream together the butter and sugar. Mix in the egg and vanilla extract.

  • Stir the flour, baking soda, and salt into the wet ingredients just until combined.

  • Scoop 3 tablespoons of dough and roll it into a smooth ball for each cookie. Place them on the baking sheet about 2 inches apart.

  • Bake on the middle rack until the edges begin to tan (about 9-13 minutes). Let cool on the pan for a few minutes, then transfer to a wire rack.

  • Make the cream cheese frosting by combining cream cheese, butter, vanilla extract, and powdered sugar until smooth.

  • Spread frosting over the cooled cookies and top with fresh fruit!

Notes

Storage: Cookies are best served immediately, but can be stored in an airtight container in the refrigerator for 1-2 days. Unfrosted sugar cookies can be frozen for 1 month and then thawed, frosted, and topped with fruit.
